Sale Fiore

Fiore di sale is made from the small clusters of sea “foam” that form in the top corners of the salt pans. Salt makers hand-sweep the delicate foam from the surface and leave it to dry in straw baskets — a precious salt made by sun, wind, and sea, nothing else.

Use it as a finishing salt: a pinch on a whole fish baked under a salt crust, on tomatoes warm from the garden, on focaccia just out of the oven, or stirred into olive oil with cracked pepper and chili flakes for a perfect pinzimonio. A little goes a long way.
